Chimay Grande Réserve Fermentée en Barriques - Chêne Français, Chêne Américain, Rhum (02/2021)
The "Grande Réserve" barrel fermented is an exceptional beer that benefits from triple fermentation and extended maturing in barrels. Unfiltered, unpasteurised, this beer has an incomparable rounded, wooden flavour.
A balance between roundness and power that will be appreciated at best between 6 months and 1 year after its bottling.
This edition from February 2021 boasts an excellent blend of the characters of Chimay Blue and Rum.

27% Rum
Produced in limited amounts using craft-brewing methods.
The sophisticated bouquet is perfectly showcased when served at a temperature of between 10 and 12°C.
Lambiek Fabriek Juicy & Wild Soleille
Unique unfiltered blend of home-brewed lambic, from spontaneous fermentation, aged in oak barrels. The lambic has a maceration with the Solaris grape, grown in Limburg, Belgium.

His inspiration came from his numerous trips to the United States and his deepest respect for the craft beer culture. This exclusive Gulden Draak combines the technology and the craftsmenship of the traditional brewing process. By letting the beer mature on whiskey barrels it gives it a distinctive and gentle finish that you have never tasted before.
Fantome Saison

This is the flagship beer from Dany Prignon's Brasserie Fantome.
The brewery is a rustic stone cottage tucked away in the very rural village of Soy in the Belgian province of Luxembourg.
The Fantome name and imagery comes from the legend in the nearby town of La Roche-en-Ardenne, which tells of the ghost of the late Countess Berthe de La Roche, who it is claimed still wanders amidst the old castle ruins.
Almost all of the beers brewed at Fantome are in the saison/farmhouse ale style. And in true eccentric style, various beers are brewed with a vast array of interesting and downright random ingredients.
This is the flagship beer from Dany Prignon's Brasserie Fantome.
It is as complex and mystical as the brewer himself, and the beer he seems most evasive in divulging its ingredients. (Though he is pretty shy to disclose any of his full beer ingredients and recipes).
It pours a hazy golden straw colour with an aroma full of earthy funk and musty farmhouse goodness. Flavours are of strong citrus, bready malt, grass and hay, more background fruitiness and a slightly sour hint. Carbonation is quite high, and the mouthfeel is almost chalky and bone dry.
This beer is amazingly complex, and totally belies its 8% ABV. A true masterpiece.
De Glazen Toren Ondineke Oilsjtersen Tripel
Ondineke is a classic tripel, brewed in the ancient way, again with exclusive natural ingredients: artesian water, malt (barley), hops, yeast and liquid candy sugar. As in the Saison no spices are added. Ondineke is an unfiltered top fermenting beer. It is soft, creamy, and of golden color. It is double hopped with the last real hops available from the region of Aalst (The variety is Hallertau Mittelfrüh). Ondineke has a positive taste evolution, and the bottles are best kept standing in a cool, dark place. It is best before two years after the bottling date. 8.5 % alc.vol. makes this a beer to be savoured. Preferably Ondineke is to be served at a temperature between 6 to 10° C. Moreover Ondineke is at its best when served in the originally designed Glazen Toren glass.
Look: Golden blond, thick white foam collar, fine sparkling.
Aroma: A light touch of honey, fine hopping.
Taste: Malty, hoppy, and full. Perfectly balanced as a Belgian tripel beer should be.
Aftertaste: Intense and long lasting.
